Within the profound depths of Belgian monasteries, Chimay Trappist beer emerges like a sacred miracle. Since the Middle Ages, Chimay beer has been a symbol of Belgian monastic brews, crafting a legendary history that merges devotion with the art of brewing.

Chimay Trappist beer belongs to an authentic Belgian Trappist brewery, named after the town of Chimay where the monastery brewery is located.

The full name of the monastery itself is the Abbaye Notre-Dame de Scourmont, established in 1850. Funded by Prince Joseph II de Chimay, it was founded by monks from the Westmalle and Westvleteren monasteries and started brewing in September 1862. Over time, the brewery’s beer recipes have undergone many changes.

The modern variants known as “Red, Blue, White, Gold, and Green” are all creations of the 20th century. Notably, the unique yeast used in today’s Chimay beer bottles still originates from the yeast used by Father Théodore in brewing the first bottle of Chimay Red in 1948.
